Cebu’s celebrated roast pig passes inspection from British, American and Filipino buyers alike

CEBU CITY – In a week in which nobody in Cebu’s property market could agree on anything, one resident emerged on Wednesday as the only figure to be unanimously approved by buyers, brokers, retirees and the sea. It was a pig.

The lechon, a 40-kilogram roast animal named, by staff, Kuya Crispy, arrived at the Mactan showroom of a major developer at 11:55 a.m., carried on a bamboo pole by two men in matching aprons. By 12:05, a line of foreign retirees had formed. By 12:20, none of them had asked for a reference.

“Nobody has ever asked a lechon for a letter from a vicar,” said Marlon Cabrera, owner of the Lahug stall that supplied the pig. “The lechon arrives. It is golden. It has a good skin. It has a good heart. Everyone says yes.”

The Mood Problem Meets the Pork Solution

The showroom had planned the lunch as a morale boost. The weeks before had been rough for the condominium trade, with brokers describing a mood of suspicion that had nothing to do with the buildings. Manila News reported that a Mactan broker had spent an entire Sunday with three signed brochures and a cold coffee, and the developer decided that the antidote was pork.

The mood was tied to a news story that brokers do not discuss lightly. Philippine authorities are examining allegations concerning Thomas Markle Sr., the estranged father of the Duchess of Sussex, who lived in Cebu until earlier this year, the Guardian reported Sunday. No charges have been filed and the allegations are unproven. The developer’s statement said it takes the matter seriously and “has chosen to serve lunch because that is the only thing it can do about it.”

The Pig’s Credentials

At the buyer’s request, the showroom posted a brief profile of Kuya Crispy alongside the lunch menu. It read:

  • Origin: Born and raised in Carcar, Cebu. Fed on rice bran and unconditional love.
  • Employment: Retired from a farm. Currently working in hospitality.
  • Character references: Cabrera, a rooster, and the entire barangay.
  • Criminal record: None. A brief altercation with a fence, in 2024.
  • Neighbors: Seven, all pigs, all excellent.

The British retirees, who have been asked in recent weeks for two referees, a utility bill and a vicar’s letter, per The London Prat, read the profile and nodded. “It’s the only CV I’ve seen in Cebu that actually makes sense,” said Gordon Tuckett, 68, a retired surveyor with a sandwich box. The article is at https://prat.uk/cebu-estate-agents-demand-character-references/, and Tuckett’s copy has a lechon grease stain on page two.

The Americans Approve

American buyers were even more enthusiastic. Bohiney found a Mactan realtor whose open houses now run two hours, but the lechon event lasted just fifty minutes, the shortest viewing in a month. A retired trucker from Amarillo took four slices, asked whether the unit came with a grill, and made an offer for a one-bedroom on the ninth floor before the dessert.

The realtor, who asked not to be named, said she felt faint. “I have never seen anyone close so fast,” she said. “I believe it was the skin.”

Comics at the Table

  1. Lolo Ben Tiu: “The pig passed every background check in Cebu. The pig has no past, no secrets and no HOA fees. The pig is the perfect resident.”
  2. Tita Linda Galang: “A British man asked if the lechon was organic. I said sir, it’s a pig. It was a pig yesterday. It was a pig this morning. It is a pig now. It’s organic by default.”
  3. Jepoy Lim: “Kuya Crispy is the only one in Cebu who has not been asked for a reference. That’s what happens when you look that good in a golden coat.”
  4. Beth Salazar: “The sea did nothing wrong. The lechon did nothing wrong. At this point the only party we haven’t cleared is the rice.”

The Numbers Are Even Better Than the Pork

For all the festivities, the market data remain strong. Colliers named the Visayas and Mindanao a key property investment hotspot in July, and developers continue to launch towers. Foreign buyers continue to operate under the Condominium Act, which lets them own units but not land, and caps foreign ownership at 40 percent. Those planning long stays may apply through the Philippine Retirement Authority.

Behavioral scientists have a name for the dynamic that makes a pig so reassuring. The availability heuristic, described by Tversky and Kahneman in 1973, explains that people form judgments from the examples that come to mind most easily. A golden roast pig is a very easy example. It is hard to think about anything bad when you are looking at crackling.

The Pig Retires, Again

By 1:30 p.m. the lunch was over. Kuya Crispy had been reduced to a skeleton, a few ribs and a note of gratitude from a Canadian. The showroom reported three new reservations. The developer’s marketing manager said she was considering a permanent lechon installation in the lobby.

Cabrera, packing up his bamboo pole, said he was pleased. “A pig is a good ambassador,” he said. “It does not talk. It does not ask. It arrives, and it makes everyone happy.”

He glanced at the empty serving tray.

“Next week, we send a bigger one.”

The wider story lives at The London Prat and Bohiney News, and for Britain’s own food-related absurdities, the Daily Squib has them covered. For the cultural reasons a roast pig is funny, see this guide to Philippine humour.
