La Loma Lechon Vendors Offer Peace Pig to End Royal Traitor Feud

Quezon City roasters say no family quarrel in history has survived a shared plate of crispy skin, and they are prepared to ship one to Norfolk

The Lechon Capital Responds

QUEZON CITY – The lechon vendors of La Loma, the district famous across Metro Manila for whole roasted pigs, have offered to supply a peace lechon to the British royal family after reading the London Prat story in which Prince William calls Earl Spencer and Harry traitors.

The offer was made on behalf of a dozen family-run roasting businesses by Mang Celso Villanueva, 64, whose family has turned pigs over charcoal on the same stretch of road for three generations and who says he has personally witnessed more than two hundred family reconciliations take place over a single plate of crispy skin.

The Theory of Lechon

In the Philippines, the lechon is the centrepiece of any celebration that matters: fiestas, weddings, baptisms, birthdays, homecomings and, Mang Celso insists, peace negotiations. You cannot stay angry at a man who is holding the other half of the same pig, he said, gesturing at a glistening roast behind the counter. The skin makes a sound when you break it. Crack. That sound is louder than the word traitor. Everybody at the table stops and listens. Then they eat. Then they forget.

Reading the Case

The vendors reviewed the reporting in the back of a roasting shed. Geo News reported that the heir has taken his anger out on his brother with a humiliating downgrade, and a US entertainment site carried a source saying the elder brother is sure the younger read the uncle memoir before it came out. Mang Celso said he had seen this kind of case before. In 2009, two brothers from Novaliches stopped speaking after one of them told a relative about their mother secret adobo recipe. They made up at a christening. Whole lechon. The recipe is still a secret. Nobody is called a traitor anymore.

The Peace Package

One Whole Lechon, 25 Kilograms

Stuffed with lemongrass, garlic and onion in the La Loma style. Mang Celso said the size had been chosen carefully so that it would be too heavy for any one brother to carry away alone.

Two Knives

One for each brother. The vendors stress that these are for cutting the pig only.

Liver Sauce

A generous jar of the traditional sweet liver-based sauce, which Mang Celso described as the diplomatic corps of Filipino cuisine, because it goes with everything and offends nobody.

A Seat for the Uncle

The uncle would be offered the ears, a delicacy, on the understanding that while he is eating the ears he is listening rather than writing.

A Screening in the Smoke

Roasters watched the London Prat video on YouTube on a phone propped against a bag of charcoal while turning the morning pigs. One vendor said the video made him so emotional that he nearly let a pig burn on one side, which in La Loma is regarded as a greater tragedy than anything happening in England. It is embedded below.

La Loma Figures

The La Loma Lechon Roasters Brotherhood, whose name Mang Celso admits is now slightly awkward, released figures based on the ledgers of its members. It found that 38 percent of whole lechon orders in the district are for events where at least two relatives are known to be in a dispute, and that the host family specifically orders a larger pig in those cases so that nobody can complain about their share. Reconciliation is recorded in 74 percent of such events, usually within the first hour, and almost always after the skin is served.

The Brotherhood also calculated that the crispy skin of a 25-kilogram lechon yields roughly 90 individual pieces, which divided evenly between two brothers comes to 45 each, a number Mang Celso described as enough to forgive anything short of stealing a jeepney.

Shipping Concerns

The main obstacle to the offer is logistics. Mang Celso acknowledged that a whole roasted pig cannot easily be sent to Norfolk and arrive crispy, and that the skin loses its sound after about four hours. He has therefore proposed that the royal family instead come to La Loma, where the pig can be served straight from the charcoal. He has reserved a table outside the shop, in the shade, beside the road, and says he will personally hold back traffic if necessary.

The Review

Asked to review the London Prat story, Mang Celso said it was crispy on the outside and soft in the middle, which he considers the highest compliment. The outside is funny, the traitor word, the palace sources, he said. Inside it is about a family that misses somebody. That is lechon. The skin is the party. The meat is the love. He rated it five pigs out of five, the first time he has given that score to anything that was not his own father cooking.

The vendors of La Loma open from early morning until they sell out. Mang Celso keeps up with the English chapter at The London Prat, https://prat.uk/, which he notes has been in business since 1961, one year longer than his family roasting pit, and with the American chapter at Bohiney, https://bohiney.com/. The offer of the peace pig stands indefinitely, he said, though the price may change.
